This is sure to be a family favorite - cupcakes for dinner! But these cupcakes are a riff on the iconic Shepherd's Pie - equally tasty, quicker cooking in their mini version, and made with oats instead of white bread crumbs. These healthy substitutions, including Halo+Cleaver Perfect Ketchup in lieu of high fructose-laden other brands often then mixed with brown sugar, are simple changes that lead to a healthy life.
Baked in a muffin pan for just 20 minutes, these cupcakes are then frosted with mashed potatoes and baked just 10 minutes more. Grab a handful of chives for the sprinkles!
The Secret to Moist Meatloaf
One thing that keeps these meatloaves moist is the addition - TWICE! - of Halo+Cleaver Perfect Ketchup. Not only is it mixed in with the meat mixture, but it also is brushed across the top of the meat before the first round of baking. After only 20 minutes in the oven, the potatoes are frosted onto the top of the cupcakes, further sealing in the juices.
Most meatloaves cook for more than an hour and then you have to wait to cut it so it doesn't crumble before your eyes. Not these! Only 30 minutes in the oven and you can pop them right out and serve.

This meatloaf and mashed potato recipe will be a sure-fire dinner winner. Made in a muffin pan, it is quick cooking, makes some healthy substitutions, and looks like cupcakes. Shhhhh! Don't tell. Let them think it's dessert for dinner!!
2 Tablespoons chopped chives, optional garnish for “Sprinkles”
Directions
Preheat oven to 375oF. Lightly oil a standard
12-muffin pan.
Pulse the onion, carrot, garlic and parsley in a mini chopper, in batches if needed, or a food processor, or mince finely by hand. Transfer vegetables to a large bowl.
Mix the vegetables with the oats. Add the ground beef, 1/4 cup Halo+Cleaver Perfect Ketchup, egg, salt and pepper. Combine until just mixed.
Divide mixture among 12 muffin cups, using a scant 1/3 cup mixture each. Brush the tops with the remaining 1/4 cup Halo+Cleaver Perfect Ketchup.
Bake until firm, about 20 minutes. Meanwhile, prepare mashed potatoes.
Remove the muffin pan from the oven and “frost” the mini meatloaves with the mashed potatoes, using about 1/3 cup per cupcake. Return to the oven and bake for 10 minutes more.
