How to Make Crispy Oven Fries
One simple trick that will get you crave-able oven fries cooked through to crispy perfection is to first soak your fries in cold water for 10 minutes. Then simply lift them out, leaving the starch behind, and layer between paper towels to dry well.
This lets the oil-tossed potatoes cook evenly in the oven and gives them a uniform golden glow, rendering them both tender and achieving maximum crispness.
Make Mealtime into Playtime
Every busy cook can use a little help, right? How about enlisting the tiny hands in the kitchen into rosemary duty? With a little help, this can be a fun project and you'll start to build culinary literacy as you engage the family into meal prep.
Simply take a sprig of rosemary between the tines of a fork and pull the fork down the stem toward the root-end of the sprig. All those little leaves will fall right off! You'll still need to give them a quick chop yourself to mince, but in the meantime you've no doubt peaked some kitchen curiosity.
Hand-cut Idaho potatoes, tossed with some healthy olive oil, and fresh rosemary, salt and pepper. It's a crave-able snack or the perfect accompaniment for burgers, steaks, chicken and more. Feel great about the oven baking and dipping in Perfect Ketchup, full of flavor but absent fructose and added sugar.
Ingredients
2 large baking potatoes, about 1 1/2 pounds, washed and scrubbed
2 Tablespoons extra-virgin olive oil
1/2 teaspoon coarsely ground sea salt
1/4 teaspoon freshly ground black pepper
1 Tablespoon minced fresh rosemary, about 3 sprigs
Preheat the oven to 400°F. Line two half-sheet pans with parchment
paper.
Cut the potatoes into 3/8”-thick slabs. Cut each slab into 3/8“-wide sticks. Transfer to a bowl and cover with cold water. Let the potatoes sit for 10 minutes, then lift out, leaving the starch in the bowl. Layer between paper towels to dry well, about 10 minutes.
In a large dry bowl, toss the potatoes with the olive oil, salt and pepper until evenly coated. Spread the potatoes evenly on the sheet pans in a single layer. Do not crowd. Bake in the upper part of the oven for 25 minutes.
Raise the oven temperature to 450°F. Flip the potatoes, rotate the pans position in the oven, and sprinkle with the rosemary. Bake for another 15 - 17 minutes; start checking at 12 minutes. Remove when the fries have reached their desired crispiness. They should be golden and crisp, and the rosemary will be fragrant.
